The Joy of Cooking for Two
My love affair with cooking began with a simple dish called Tinola (a chicken and ginger broth-based delight) when I was about 11 years old. My sister and I were left in the kitchen to feed a bunch of people living at our childhood home. Fast forward to today, I still adore Tinola, but now I mostly cook for two (sometimes three, because we love our leftovers!).
I find my flow state in the kitchen, regardless of the dish's difficulty. I truly enjoy the prep work, the heat of the kitchen, and the taste testing—though I'd say that's more my partner's task.
As I've aged, I've become more inclined to whip up healthier and easier meals. I like to cook fast and enjoy my meals hot from the pot. My partner, on the other hand... not so much.
He thrives on slow-cooking, prep-heavy dishes. But that doesn't stop us from working together in the kitchen and cooking for each other.
Quick and Easy Healthy Recipes for Two by Two
It's truly a delightful experience to cook for a loved one, particularly when focusing on dishes that are both healthy and full of flavor. I've come up with three dishes that are quick and easy to make and will encourage couples to enjoy quality time in the kitchen together.
Steamed Chicken with Ginger Oil
I would say this is a variation of the Tinola I made back then. But the reason this has become a home staple for us was this restaurant we frequent when we want an easy and light meal.
It's fairly simple to make, let's get started!
Ingredients:
2 chicken breasts (or any part you like most)
3 thumbs ginger, cut in sticks
4 tablespoons cooking oil
2 cloves garlic, minced
1/4 cup of leeks
Salt and pepper to taste
Directions:
Steam the Chicken for 30-40 minutes until cooked
stir-fry the ginger until fragrant in 4 tbs neutral cooking oil
add 1/2 cup of water and the garlic
cook this down until most or all of the water evaporates
add the leeks, mix it around a bit
add the chicken. Optional: slice it
baste the chicken in the oil
To emphasize collaboration in the kitchen, assign a task for each one. This is pretty easy, I am sure the both of you can manage.
