Comfort in a Bowl: Easy Pancit Canton with a Twist

Fast, delicious, affordable.
I had a hard time eating as a child. Totally the opposite of how I view food now. I used to just eat Pancit Canton (specifically Lucky Me! Pancit Canton) for every meal with so much gusto. My aunt would look at me with astonishment as I devour my plate as if it was my first time having it.
I remember feeling down when one of my teachers put bean sprouts on my pancit canton lunch. I just lost my appetite.
How much do I love it? It was literally all I ate.
As an adult, I realized, that was bad for my health. But learning this did not stop me from having my first love for a meal. Although not in every meal, I still crave it on some late movie nights.
And as a person trying to eat healthy, I learned that I could make it and eat it with the good-for-your-body stuff, too!
I bet you’d want to know how else you can make this “instant” noodles match your adult conscience agree with your cravings.
Let’s Get Started!
Ingredients:
2 packets of your favourite instant ramen
1 cup cabbage cut into strips
1 medium carrot cut into match sticks (julienne)
1 head bok choy (optional)
1 cup broccoli (optional)
1 tsp soy sauce
1 tsp oyster sauce
1 tbs sesame oil
Note: add as many vegetables that you enjoy eating, boil then and serve on the side
Directions:
Cook the ramen according to instructions, leaving out the seasoning for later
Boil the vegetables with the noodles (we like cutting the cooking time, don’t we?)
Pro Tip: cutting the vegetables in strips makes it easy to have fun slurping them in long strips along with the noodles
(Optional) boil the bok choy and broccoli and have them on the side
After draining everything, mix in the seasoning packet, add a tiny bit of soy sauce or oyster sauce and sesame oil (adding the vegetables in the mix will make the seasoning packet less tasty, adding the soy sauce and oyster sauce will make it savory again)
Serving Suggestions:
Serve with fried chicken or pork chop (cos sometimes, carbs and fiber are not enough 😂)
You can definitely add some heat like chili flakes or my chili garlic sauce recipe on the side!
I know, I know, this isn’t the healthiest of meals. Adding the vegetables will make it less sinful and more palatable to the conscience.
